Are you sometimes tired of oatmeal, smoothie or bread for breakfast? Or do you just want to try something new? Than this Crispy Apple Topped Chia Pudding is definitely something you should go for. The mixture between the crispy apples and the creamy chia pudding is perfect. And for all who are in a hurry in the morning: The recipe only requires 15 minutes and you can even make the chia pudding the evening before.
Try it together with my Creamy Cacao Coconut Drink for a healthy, easy, quick prepared and nutrient-packed breakfast. It also looks fantastic when having guests over for a brunch. So, I guess it is a kind of a slow and fast food in one, very adaptable.

- 60 g chia seeds
- 150 ml coconut milk
- 100 ml water
- 2 tsp maple syrup
- 1-1½ vanilla bean
- 1 apple, cubed
- 20 g hazelnuts, halved
- 1 tbsp maple syrup
- Cinnamon and cardamom
- In the first place, mix coconut milk, water, maple syrup and vanilla bean. Add the chia seeds and set aside.
- Then, heat a non-stick pan over medium heat. Once hot, add the apple, hazelnuts and maple syrup. Let the nuts caramelize, it will take about 2-3 minutes.
- Finally, top the chia pudding nicely with the apple hazelnut mix.
* You can easily prepare the chia pudding the evening before.
